Ingredients
The Noodles & Prep:

Noodles: 500g fresh egg noodles

Coating: 3 tbsp vegetable oil (to separate noodles)
The Vegetables:

Aromatics: 5 spring onions (sliced), 3 garlic cloves (finely chopped), 1 small green finger chilli (finely chopped)

Crunch: 120g mixed peppers (sliced), ¼ small cabbage (shredded), 180g bean sprouts, 80g French beans (stemmed and chopped into 3cm pieces)

Earthiness: 120g chestnut mushrooms (sliced)
Seasoning & Sauce:

Fats: 4 tbsp sesame oil

Sauce: 4 tbsp soy sauce

Spice Blend: 1 tsp coarse black pepper, 1 tsp salt, ½ tsp ginger powder, ½ tsp red chilli powder (optional)

Garnish: 1 tsp sesame seeds, 4 tbsp fresh coriander (chopped)
Method
Step 1: Prep the Noodles

Place the fresh egg noodles into a large bowl.

Pour over the 3 tablespoons of vegetable oil.

Use your hands to gently toss and separate the strands so they are evenly coated and won't stick during stir-frying. Set aside.
Step 2: Temper the Aromatics

Heat the sesame oil in a large wok or sauté pan over medium-high heat.

Add the chopped garlic, green chilli, sesame seeds, ginger powder, and spring onions.

Stir-fry for 1 minute until the garlic is fragrant but not browned.
Step 3: Sauté the Vegetables

The Firm Veg: Add the French beans to the wok and cook for about 1 minute.

The Rest: Add the mushrooms, mixed peppers, and shredded cabbage.

Sauté: Cook for 2 minutes on medium heat, ensuring the vegetables remain crisp and vibrant.
Step 4: The Stir-Fry

Add the bean sprouts and the prepared egg noodles to the wok.

Pour in the soy sauce and sprinkle over the red chilli powder (if using), salt, coarse black pepper, and fresh coriander.

The Toss: Stir-fry vigorously for 3-4 minutes, tossing the noodles constantly to ensure they are heated through and evenly coated in the seasoning and sauce.
Step 5: Serve

Serve immediately while steaming hot.
