These golden, crispy Halloumi fries are dusted in a fragrant spice blend and served with a zesty, cooling mayo for the ultimate savory snack.

Ingredients

The Halloumi Fries:

  • Cheese: 2 x 225g blocks Halloumi (cut into thick fries/chips)

  • Dredge: 75g plain flour

  • Spice Mix: ½ tsp coriander powder, ½ tsp paprika, ½ tsp garam masala, ½ tsp orange pepper, ½ tsp garlic powder

  • Frying: Vegetable oil for deep or shallow frying

The Spiced Lemon Mayo:

  • Base: 8 tbsp mayonnaise

  • Zest & Tang: 2 ½ tbsp fresh lemon juice

  • Spices: ½ tsp cumin powder, ¼ tsp red chilli powder, ¼ tsp chaat masala, a pinch of salt

  • Optional: Fresh mint leaf for garnish


Method

Step 1: Prepare the Spiced Coating

  1. In a medium mixing bowl, combine the plain flour with the coriander powder, paprika, garam masala, orange pepper, and garlic powder.

  2. Whisk the dry ingredients together until the spices are evenly distributed.

Step 2: Coat the Halloumi

  1. Toss the Halloumi pieces into the seasoned flour mixture.

  2. Ensure each "fry" is thoroughly and evenly coated, shaking off any excess flour before frying.

Step 3: Fry to Perfection

  1. Heat your oil in a frying pan until it reaches approximately 175°C.

  2. Work in batches: Carefully lower one-third of the halloumi into the hot oil.

  3. Cook for about 2 minutes until the fries are crisp and a deep golden brown.

  4. Lift them out and drain on kitchen towels. Repeat for the remaining batches.

Step 4: Whisk the Dip

  1. While the fries are draining, combine the mayonnaise, cumin powder, salt, red chilli powder, chaat masala, and fresh lemon juice in a small bowl.

  2. Mix well until smooth and creamy. Garnish with a mint leaf if desired.

Step 5: Serve

  1. Plate the Halloumi fries while they are still hot and squeaky.

  2. Serve immediately with a generous side of the zesty spiced lemon mayo.
